HOW TO DEAL WITH SUMMER

40 degrees weather is no way to live. The 'Indian Summer' is upon us and let’s face it we can’t have endless glasses of sugar laced iced-teas.

Here is a recipe of a veggie smoothie to keep yourself hydrated and kick start your day. It not only hydrates you but is also a great way to incorporate tons of nutrients. 

GREEN GOODNESS SMOOTHIE

I believe fruit should be eaten not juiced as far as possible. We only end up having the sugar, and all the good bits do not enter our body when you juice it. Veggie fibres are difficult to break down, so make sure when you are juicing vegetables other than cucumber, always strain the juice.
  
YOU WILL NEED
1 Cucumber
150 grams Bottle Gourd
A green leafy vegetable, (I used Parsley but you could use Coriander, Mint or Basil)
Juice of a Lemon
1 tbsp Moringa powder
1 tbsp Basil seeds.
(Forget Chia seeds, good old Subja aka Basil seeds, remember the black bits in the falooda?)
1 tbsp Flax seed powder
A pinch of Black salt
(Don't skip this as this adds taste and flavour to the juice!)

Blend with ice in a mixer, strain and get your dose of green for the day. 

SUMMER MANGO SALAD WITH PISTACHIO DRESSING

Mango makes everything taste sooo good. And while I like the mango in it’s truest form, this tangy, sweet salad is my new favourite. 
 
YOU WILL NEED
1 handful Rocket leaves
1 handful Lettuce or mixed leaves
1/2 Red Bell pepper julienned
1 cup Alphonso mangoes cut in cubes
Mixed seeds, (I used Flax and Pumpkin)
Bean sprouts or Alf Alfa sprouts
 
DRESSING
1 tbsp Olive oil
2 tbsp Apple Cider vinegar
1 tbsp Honey
2 tbsp chopped Pistachios
2 tbsp chopped Coriander
1 tbsp Chili flakes
 
 
1  In a bowl, toss all salad ingredients.
2  Add all dressing ingredients in a jar and shake well, adjusting seasoning.
3  Dress the salt by pouring the dressing around edges of the salt bowl, gently tumbling the salad ingredients into the dressing.​
